Raffaello marshmallow +BONUS

Raffaello marshmallow

Dough:

Ingredients:

  • 2 eggs
  • 2 spoons of xylitol
  • 2 spoons of corn flour
  • half teaspoon of baking powder

Preparation:

Beat whites of egg until stiff. Mix with xylitol and yolks. Then, add corn floour and baking powder, mix delicately, and bake for about 10 minutes in 180oC

Coconut mass:

Ingredients:

  • 400 ml of coconut milk
  • 100 ml of water
  • 4 spoons of xylitol
  • 4 spoons of coconut shreds
  • 4,5 teaspoons of gelatine + 1/4 glass of boiling water

Preparation:

Dissolve gelatin in boiling water and then cool it down

Mix coconut milk, shreds, water and xylitol. Add gelatine, and mix again.

When mass get set, pour it on cooled down dough, and put into refrigerator.

Raffaello pralines

Ingredients:

  • half glass of millet
  • half glass of coconut milk
  • half glass of water
  • 4 spoons of xylitol
  • 4 spoons of coconut shreds+ little more for topping

Preparation:

Put millet, coconut milk, half glass of water and xylitol into pot. Cook, until millet absorbs all the liquid (consistency have to be creamy, so you have to mix frequently). If all liquid is absorbed, and millet is still hard, add more water, and cook until soft. Add shreds, mix it and cool it down then. After cooling, form balls and add shrims as topping.
